I wanted to costumise my already well-known banana pancake recipe, this time adding veg and a bit of colour. The result: Pink beetroot pancakes.

Heat a non-stick pan with a little coconut oil, Use 3-4 spoonfuls of pancake mix for each pancake. When bubbles start to appear, flip them over and leave to cook for 1 more minute.
